In 2008, four young chefs enrolled at the Louisiana Culinary Institute. They immediately formed a strong team; winning several awards while gaining recognition in the culinary world. In april of 2010, just three months after their graduation, they opened Hot Tails in an old drive-thru convenience store in New Roads, Louisiana. Their new restaurant focuses on a mix of Cajun and Creole cuisine with a new touch of creativity. Their cuisine has been referred to as Hardcore South Louisiana. Having four trained chefs in the kitchen makes Hot Tails a very unique dining experience, maintaining their precision and finesse in ever dish, while capturing the fun and rustic atmosphere that we all love in Louisiana.
